Balsamic-Honey Roasted Heirloom Tomatoes

Yes, they are as delicious as they sound. Unfortunately, I just started eating them and forgot to take a picture.

Balsamic-Honey Roasted Heirloom Tomatoes

1 container mini heirloom tomatoes (Trader Joe’s)
little less than 1/4 cup balsamic vinegar (roughly)
1/2 tbsp honey (adjust for tartness of balsamic)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried tarragon
1/4 tsp red pepper flakes
pinch of sea salt
pinch of black pepper

1) Preheat oven to 400 F.
2) Layer tomatoes in a baking dish.
3) Mix ingredients from vinegar to black pepper in a small bowl. Make sure the honey dissolves well.
4) Pour over tomatoes.
5) Place dish in the oven for about 20-25 (I think 30 tops.) minutes. Watch the tomatoes and roll them/flip them about in the dish so they soak up the mixture evenly. It acts like a glaze on the tomatoes.
6) Serve hot. Tomatoes are done when they start to wither a bit and get a little bubbly-looking.

These are good paired with roasted chicken or, puree them and use as a base for a pasta sauce.
